Food research is a good example. It reminds me of food industry's dream to develop a square tomato because it would be easier for them to pack and ship.
The gap in research that you identified in food research also applies to building and architecture research. In fact, this was such a strong general pattern that it created an opportunity in the building science and "occupant" studies field for "green" building proponents to sponsor research that shows that human health, productivity, and satisfaction can be significantly/measurably improved by adopting certain principles, methods, and materials that fit within the "green" new construction (NC), architecture, and neighborhood design (ND) practices.
