Do not over look the Road Map series. While aimed at a younger population, it has content and exercises that could be ramped up. Also, look at all the "D" series of papers from MIT. There is a rich collection of material there. Finally, look at the material online from Sloane at MIT, their open courseware. Some very good stuff there. I am unsure of copyright considerations; I'm sure they can clarify.
