Although I don’t know of organizational use of models relating to infection, teachers have used various models to help students understand dynamics of infection within curricular contexts. These include within social studies - spread of the plague, and within science – spread of HIV. Teachers have used a handshake game to show typical s-shaped growth along with a simple two-stock computer model to represent the dynamics experienced within the game and to facilitate a discussion of potential leverage. Others have used more complex models specific to a given situation (e.g. spread of plague). The two-stock version is available online.
